        Nuts and bolts sounds more like cockney rhyming slang for an electrical outlet. 230 volts -> bolts -> nuts and bolts

    black olives from pizza places are usually not actually black; they’re green olives that have been chemically treated to oxidise quicker.

    …which is presumably why they usually taste like o-rings.

        That might explain why I only ever get the texture from olives on pizza…which is…actually still ok with me. Flavorless for sure but yum olive texture

          The texture of canned “black olives” isn’t really all that different from most types, but they have a much weaker flavor because they are processed in a matter of days instead of weeks/months/years of the alternative methods. Those longer methods, usually some combinations of brine and/or fermenting are where most of that flavor comes from. I only know this because I had a grand idea to try to grow my own olives and I looked into it and realized I wasn’t ever going to end up with my own that resembled stuff from the store. This is just more random info hiding in my brain instead of things that would be useful on a daily basis.

          It’s the same fruit, there’s no ‘black’ of ‘green’ olives. It’s just picked while unripe because it’s cheaper to process.

            The blacks are more ripe tho. And the greens in brine, against the bitterness.

            Edit: but most are colored with E579 or E585.

              Yes, all olives are cured in some fashion. They’re very hard fresh from the tree.

          I just looked, here (Switzerland), black olives from Migros are more mild and throughout black, the real deal. Probably from Tessin or Italy. That’s why the coloring of green olives was news to me.

        Yeah, around here, nachos that you buy from the local pizzaria is pretty much this, just some sad moist chips with a clump of stiffened formerly hot cheese, olives and jalapeños.
        And honestly, I wouldn’t be surprised if a variant where the nachos are replaced with pommes frites already exists somewhere.

            Ranch isn’t terrible on a salad, but that’s where it should stay. Beyond that? Blegh. Some people even use the ranch seasoning as seasoning for other things, like fried chicken.

            I mean it literally is in 99% of cases. Mayo got a bad rap for having too many calories and being associated with poor people so now they call same thing aioli.

      Mayonnaise, probably… would work for most Europeans.

      For the Western hemisphere, hollandaise or Thousand Island. (Keep in mind, ketchup won’t work well with the olives.)

      Asia, you’re gonna want a few extra things to build it up. Japan got it right with Umami, baby.

      Some garlicky gravy-adjacent sauce and maybe something like chili flakes and I’d eat that with zero hesitation.

      Even if these look like the abhorrent “olives” that are surely the leading cause of people thinking olives are disgusting. If these were freshly sliced regular brown olives (regular to me in the Mediterranean) they wouldn’t even need sauce at all. Although the chili flakes can stay.

        Personally when I lived in The Netherlands I was quite partial towards lots of mayo on my patates (chunky chips, only far more than merely just larger) rather than pindakaas saus, but patates are a hole different class than English-style chips (which is the same style as in most of Europe) which do gain from drizzling them with vinegar to offset the absorbed fat.
